About This Role
Manages all operations of a desiccated coconut (DC) processing factory — raw nut procurement, husking, paring, shredding, drying, grading, and packing for export. DC factories are concentrated in Kurunegala, Puttalam, and Gampaha. Key employers: Renuka Holdings, Cargill Lanka, Asian Alliance, Manilal & Sons DC factories.
A Day in the Life
Manage all operations of a desiccated coconut (DC) processing factory — from raw nut intake through drying, milling, grading, and packaging — ensuring consistent quality for export to confectionery and food manufacturers worldwide.
- Plan daily production schedule based on nut intake and export orders
- Oversee receiving and quality assessment of raw coconuts at intake
- Monitor desiccated coconut processing line — paring, washing, grating, drying, milling
- Ensure moisture content (below 3%) and white colour quality of final product
- Manage 200–500 factory worker roster, attendance, and productivity
- Coordinate with export team on product specifications per buyer (fine, medium, coarse grades)
- Maintain HACCP, BRC, and SLSI certification compliance
Work Environment
Desiccated coconut factories in Kurunegala, Kuliyapitiya, Gampaha, and Negombo. Hot, humid factory environment with continuous production line. Shift-based operations including early morning for fresh nut intake.
Typical hours: 55h/week · WLB score 5/10 · COMMON overtime
Shift-based production management with early mornings and occasional weekend operations during peak nut seasons. Factory location often outside Colombo requires commuting or relocation.
